With a variety of over 250 breads around Italy how best could we showcase these with a selective range. Our determine factors were overall taste, the making process and the variety of flour. Having researched and tested numerous types of bread we came to the conclusion that Matera, Altamura, Casereccio and Cafone were to be out choice.

Altamura bread from the Apulia region and Matera from the Basilicata region are crafted using Durum wheat, resulting in a golden hue and subtle nutty flavour . Whilst Cafone bread (peasant bread) from the Campania region of Italy, incorporates Lievito Madre, the Italian counterpart of sourdough. Made with a blend of 00 wheat flour and strong wheat flour, it yields a crusty, airy, and chewy texture. Casereccio is celebrated as the quintessential homemade bread.

Although not of Italian origin, Tailored Flavours is proud to introduce a range of speciality breads crafted from diverse flours and seasonings. Our selection includes wholemeal bread, multi-seed and flake bread to a selection of strong white olive breads. Our bread options include traditional artisan loaves, boules and French baguettes.

All breads from TAILORED FLAVOURS are freshly made to order, and due to the preparation and baking process, we kindly request a minimum of 24 hours notice.

Le Focacce & Pizze Leccesi

Focaccia

Originating from the Liguria region of Italy, the Focaccia has been a staple of Italian cuisine for centuries. A versatile bread that can be served as an appetiser, or side dish, it can also be sliced through the middle and filled with your favourite filler, creating an amazing sandwich.

Focaccia is made silmillaly to pizza through due to its denseness it requires extra virgin olive oil to keep it soft and moist. Unlike pizza, classic Focaccia toppings are primarily limited to these ingredients: Cherry tomatoes, sun dried tomatoes, green/black olives, sliced onions, rosemary coarse sea salt.

Pizzi Leccesi

Crafted from durum wheat, these buns boast a crunchy exterior and a soft flavourful center. Packed with cherry tomatoes, onions, green/black olives, oregano and capers.

This delicacy’s humble beginnings originate from Salento, Apulia born from leftover ingredients in local households. before gaining popularity as street food, they’ve now cemented their place as a staple in the regions bakeries. Whether enjoyed as an appetiser or a snack, they are a delightful treat any time of the day.
